I. YERBA MATE
It is a tree that can grow up to 10 and 15 meters.
In farms it is kept as a shrub due to the annual pruning that is done manually, with no help from machines.
It has shiny coriaceous leaves and small whitish flowers.
Small drupaceous fruit, going from green to reddish black, with four seeds.
It grows in warm, humid climates.

II. PRODUCTION PROCESS

NURSERY
Nursery: the best plants aged 6 to 8 months are carefully selected from our nursery.

Transplant: to a definite place where they are looked after to assure a proper development in order to begin the first harvest during the fourth or fifth year.

Harvest: it is once a year and is done manually with pruning shears and by hand to snap the branches and eliminate the thicker ones. The branches with leaves are “emponchadas" on canvases and placed on loading vehicles.

BARBACÚA
Sapecada: a process through which branches and leaves are passed through the fire for a few seconds to stop the enzymatic activities (fermentation, oxidation) and to eliminate part of the humidity.

Drying: elimination of humidity through dry heat to obtain a residual that guarantees the good conservation and the yerba mate is transformed for its stationing.

Canchado: is the grinding of the dry leaves of yerba mate

Stationing: This is one of the most important stages. It is when the yerba mate acquires its flavor, aroma and characteristic color. It needs 20 to 24 months to achieve unification and avoid variations in the final quality. The stationing is done in bulk in warehouses that are especially conditioned for this purpose.
Before the stationing, each lot is analyzed in the lab.

MILLING
Milling: The process begins with a quality control of the raw material in the lab. The Yerba mate goes through the sieve to separate any remaining thick sticks and later goes through the mill.

Packaging: The machines enable a hygienic and ecological packaging process in environmental friendly packaging.
