Fill three fourths
of the gourd with “Pajarito” yerba mate. |

Cover the gourd
with a hand and shake it for the yerba mate to
settle. Tilt towards the side and leave a free
space. |

Heat the water,
and when it is warm begin pouring it into the
free space leaving the top part dry and let the
yerba mate brew. Set aside for a few minutes. |

When the water
reaches the right temperature (before the boiling
point) you can begin to pour the water softly
keeping the yerba mate tilted to the side. |

Keep the water
at a constant temperature (the use of a thermos
is recommendable). Try not to move the straw,
but if it’s necessary do so when the mate
has no water inside. You can begin enjoying a
delicious mate. |
