Fill three fourths of the gourd with “Pajarito” yerba mate.
Cover the gourd with a hand and shake it for the yerba mate to settle. Tilt towards the side and leave a free space.
Heat the water, and when it is warm begin pouring it into the free space leaving the top part dry and let the yerba mate brew. Set aside for a few minutes.
When the water reaches the right temperature (before the boiling point) you can begin to pour the water softly keeping the yerba mate tilted to the side.
Keep the water at a constant temperature (the use of a thermos is recommendable). Try not to move the straw, but if it’s necessary do so when the mate has no water inside. You can begin enjoying a delicious mate.
